I received my Grade A license in June, 2008. Now I can sell raw milk and raw milk cheeses. Currently making two cheeses that are each aged sixty days or more. One is a Greek Feta and the other is our Northwest King, a farmstead hard cheese, similar to cheddar.

Northwest King Cheddar:  Buttery texture, semi sharp flavor with a sweet finish. Made from raw milk and aged 60 days or more. Cheese will keep at least two months unopened in the refrigerator. Available in 8-oz and 1-lb vacuum packages.

Greek Feta:  Stronger, sharper flavor. Made from raw milk from my herd of goats gives it a smooth texture with a complex taste. Aged 60 days or more. Cheese will keep at least two months unopened in the refrigerator. Available in 8-oz and 1-lb vacuum packages.

Cheeses and fresh milk are sold at local Farmer's Markets from May to November. and at The Food Co-op here in Port Townsend. I also sell off the farm year round.
